  • 2 pork tenderloin fillets

  • 1/3 cup butter

  • 2 finely chopped shallots

  • 7 tbsp all-purpose flour

  • 1 cup vegetable stock

  • 2 tbsp finely chopped bergamot leaves

  • Salt and pepper

  • 1 tbsp creme fraiche

Wild Rice with Black Walnuts

  • 5 ounces wood parched wild rice

  • 3 ounces green garlic

  • 3 ounces black walnuts

  • 2 tablespoons wild bergamot

  • Roughly ¼ cup ground ivy leaves

  • Kosher salt and pepper

  • 3 tablespoons unsalted butter

  • Sea salt and fresh ground black pepper

Wild Bergamot Jelly

  • 2 cups Wild Bergamot blossoms

  • 4 cups water

  • 1 package pectin

  • 3 Tbs lemon juice

  • 3 cups sugar

Wild Bergamot Chocolate Cookies

  • 1 1/2 cups lavender bergamot tips

  • 3/4 cup granulated sugar

  • 1 1/4 cups unsalted butter

  • 3/4 cup brown sugar

  • 2 eggs

  • 1 3/4 cups flour

  • 1 1/4 cups cocoa powder

  • 2 teaspoons baking soda
