About Us
Elk City Gardens was founded in 2021 by Tim Welchert. We have a 30 x 50 garden at our home in Elk City and a 60 x 110 garden on our neighbor’s property. We practice sustainable regenerative farming and use compost as fertilizer and natural weed management in place of chemicals. In addition to selling produce, our mission is to educate others on how to start their own gardens, how to care for and store their produce, and ultimately how to use fruits and vegetables to create healthy, nutritious meals.

Tim Welchert
Tim has a passion for gardening and the culinary arts. He has over 10 years of gardening experience and comes from a farming background. His grandparents were farmers in Fort Calhoun and supplied produce to local grocery stores. He grew up in Bennington and has great connections throughout the area. In addition, he took culinary classes at The Art Institute in Colorado and enjoys using fresh produce from his garden to cook for others.
Mary McDonald
Mary is from Omaha, but she spent 6 years in Vermont where she learned to love farmer’s markets and using fresh local ingredients from working at a restaurant with chef-inspired menus. Mary has a Bachelor’s in Finance & Banking from the University of Nebraska at Omaha and completed her Master’s in Business Administration from Midland University in 2022. She brings her business knowledge and financial background to the team.
